Ingredients
- 1 bunch of cauliflower
- 2 tablespoons of olive oil
- 1/2 cup of lentils
- 1 cup of vegetable juice
- 1 teaspoon of thyme
For the mint pesto sauce:
- 2 cups of mint leaves
- 1/2 cup of pistachios
- 1/2 cup of olive oil
- 1 large clove of garlic
- Sufficient salt and pepper

Recipe for Cauliflower steak with lentils:
- Preheat the oven to 220 degrees Celsius.
- In a pot, boil lentils, vegetable juice, salt, pepper, and thyme. Reduce heat, cover, and simmer until lentils are cooked (35 to 40 minutes).
- Drain the cooked lentils and set aside.
- Flatten cauliflower florets and cut them into three slices about 2 cm thick.
