  • 140 grams water
  • 140 grams milk
  • 55 grams Sugar
  • 320 grams butter
  • 11 grams Yeast
  • 12 grams Salt

Recipe

To prepare croissant dough, mix flour, water, milk, sugar, yeast, salt and 40 grams of butter in a large bowl and mix with a mixer for 3 minutes at low to medium speed. Then gather the dough in the form of a round disk, place it in a container that you have greased in advance, and cover it. Place the dough in the refrigerator overnight to rest.

To prepare the butter sheet, first divide the butter into small pieces and sprinkle some flour on it. Then spread the butter on a piece of parchment paper. Place another piece of greaseproof paper on it and make the surface smooth with a rolling pin. Place the sheet of butter in the freezer for 2 hours until it cools and hardens. 

Take the dough out of the refrigerator and spread it on the work surface with a rolling pin until its thickness is about 1 to 1.5 cm. Then remove the butter sheet from the refrigerator and place it in the center of the dough layer. Bring the corners of the dough in the shape of an envelope on the butter until the butter is completely covered. Then put the dough in the refrigerator for 30 minutes.

Sprinkle a little flour on the surface of the rolling pin and spread the dough on it. Using a rolling pin, flatten the dough from the middle to the outside. Then fold the dough again and put it in the refrigerator for 30 minutes. Repeat this until the butter penetrates well into the dough. Usually, repeating this movement 3 times is enough to penetrate the butter into the croissant dough. Finally, cover the dough and put it in the refrigerator overnight.

Remove the dough from the refrigerator. Sprinkle a little flour on the surface of the work table and rolling pin and spread the dough thinly on it. Continue doing this until the dough measures about 60 cm by 20 cm. Then cut the dough into triangular pieces.

Put some chocolate in the middle of each piece of dough, then roll the dough from the wide side to the narrow side.

Heat the oven to 200 degrees. Mix the egg yolk with a little milk and sugar and apply it to the rolled dough with a brush. Place the rolled pieces on the oven tray and bake for 20 minutes until they turn gold. Your chocolate croissant is ready to serve!
